Ravioli

Stuffed pasta. Roll two thin sheets of fresh pasta. Place filling on one sheet, spray with water, and drape second sheet on top, avoiding air bubbles. Let dry and freeze or cook.

Ricotta filling:

• Ricotta, pressed to be more dry
• Parmesan
• Nutmeg
• Lemon Juice
• Salt and pepper
